Stuffed Bell Peppers
This simple recipe will sure to delight even the pickiest eaters! Great recipe to double for leftovers or freezer meals.
Ingredients:
4 large bell peppers1 cup cooked rice
1 lb. ground beef
1 onion diced
4 teaspoons minced garlic
1/8 teaspoon black pepper
1/4 teaspoon Rosemary
1/2 teaspoon Basil
1/2 teaspoon Parsley
1/2 teaspoon Oregano
1/2 teaspoon Thyme
1 jar spaghetti sauce or 16oz homemade sauce
Preheat the oven to 350 degrees F.
Remove the tops and seeds of the bell peppers.
In a large saute pan or skillet, saute ground meat, onion, garlic, black pepper, rosemary, basil, parsley, oregano and thyme over medium heat. Cook until the meat is browned, stirring with a heavy wooden spoon to break up the lumps. Remove from the heat and stir in cooked rice.
Stuff the bell peppers with the mixture and place in a baking dish. Pour spaghetti sauce over and around the bell peppers. Cover and bake 1 hour and 45 minutes.
Remove from the oven and let rest for 10 minutes before serving.
