After I was forced to go on a gluten-free, wheat-free, diary-free, egg-free, soy-free diet, there wasn't much left to eat! After searching the internet and trying tons of recipes, I made this one. These yummy great-tasting bars are awesome to enjoy any time of day! Perfect for breakfast or a snack on the go.
Ingredients:
2 cups Gluten Freeregular or old-fashioned rolled oats (not instant or quick cook)1-1/2 teaspoon baking powder
3 tablespoons Ground Flaxseed
1/2 to 1 teaspoon ground cinnamon
1 cup almond milk
3 tablespoons water
1/2 cup applesauce
1/4 cup honey or agave nectar
1/2 cup diary free Chocolate Chips
1/3 cup raisins or dried cranberries
Preheat oven to 350 degrees F. Grease 8x8 baking pan. Mix 3 tablespoons of water and 1 tablespoon of the flaxseed and set aside.
In a food processor, grind oats.
With a large spoon, stir together the ground oats, baking powder, 2 tablespoons flaxseed and cinnamon.
Add milk, applesauce, honey, vanilla and the water/flaxseed mixture to dry mix. Stir until completely mixed
Then fold in the chocolate chips and raisins or cranberries.
Pour mixture into pan.
Bake for 40 minutes. Allow bars to cool completely before cutting, or cut right away and enjoy warm!
